For as long as we can remember were were making cakes using the classic egg recipe, our mums letting us lick the raw cake batter off the wooden spoon - you all know what we’re talking about! So, when making our first cake without using eggs, well... it was quite a daunting task. Will it rise? Will it be light and fluffy? Can you even make a victoria sponge without using butter and eggs? The answer to all those questions are - yes! Vegan baking actually gives you a lot more options. Once you get the hang of it, it couldn’t be easier. We went from not knowing how to make a vegan cake to now running a business making them! And no one will ever know that they’re vegan, promise.
Here are some of the ingredients you can use instead of eggs in baking.
Mashed Banana – great for pancakes
Applesauce – great for muffins
Silken Tofu – good for quiches and frittatas
Ground Flax Seed - perfect for brownies and cookies
Chia Seed – a great binder
Plant Yogurt – great for bread
Milk, Vinegar and Baking Powder – perfect for fluffy cakes
1 egg =
3 tbsp apple sauce
3 tbsp plant based yoghurt
3 tbsp Silken tofu
1 tbsp Flax + 3tbsp water
1 Tbsp Chia + 3tbsp water
1 mashed banana
2 tbsp Plant milk + 1 tsp oil + 2 tsp baking powder
